blueberry mascarpone pie with ritz crackers?




I used a store bought crust due to my lack of kitchen space

for the cheese layer
1 8oz pkg mascarpone cheese
2 eggs
cornstarch
sugar
vanilla
a squeeze of lemon juice

for the berry layer
2 pints blueberries
sugar

cracker layer
ritz crackers
sugar

or
graham crackers

crust
2 deep dish pie crusts or make your own.


mix mascarpone, eggs, cornstarch (i eyeballed this), sugar, vanilla and lemon juice in a bowl, set aside

mix blueberries and sugar in another bowl.

spread cheese mixture atop pie crust. add  blueberries. crumble crackers atop, if using ritz sprinkle a bit of sugar. dot with butter. cover with other dough.

bake at 300 degrees for an hour then raise temperature and bake till crust is browned to your liking.

corned beef, roasted red bliss potatoes + arugula, tomato and cucumber salad


gotta small point cut piece of corned beef from Fairway last Thursday so I plopped it in my 4qt soup pot with some corned beef spice mix from Penzey's.

Ended up taking a nap and the water boiled out around hour 2.

Put more water in and finished it up.

Potatoes were roasted with a salt mix from Porchetta down in the East Village, bacon grease, extra garlic powder and a dash of soy sauce at the end.

Salad has hot house cucumbers, sweet cherry tomatoes  and arugula from the Fairway on 72nd
